Where Mom came up with this salad, we will never know. She can't seem to remember. But it's so simple and fresh you can't help but love it on a hot summer evening. It's great with a steak dinner, meatloaf or chicken. I love it for lunch when its hot and I want something light. It's different but everyone who's tried it is pleasantly surprised and asks for more.

Ingredients For pineapple salad

  • 2 c
    shredded lettuce, divided
  • 1 can
    sliced pineapple in juice
  • 1 c
    grated cheddar cheese (mild)
  • 1 Tbsp
    sugar
  • 1 c
    miracle whip salad dressing or mayo

How To Make pineapple salad

    Drain pineapple and reserve juice.

    On four salad plates arrange 1/2 cup shredded lettuce
  • 3
    Lay out two pineapple rings overlapping on lettuce.

    Sprinkle 1/4 cup of cheese on each plate.

    Combine Miracle Whip and sugar; whisk in pineapple juice until dressing is creamy but not too thin not too thin. (About the consistency of french dressing) **Mayo can be used but add more sugar to taste.

    Drizzle dressing over salad. *Fresh strawberries or maraschino cherries can be used as garnish. **Canadian Bacon chopped can be added as well. Layer between pineapple and cheese. ***Leftover dressing can be stored in an airtight container for up to a week and is great as a dressing for fruit or a wedge salad.
