Nice fruit salad for the holidays. If you are sensitive to heat, leave out the crushed red pepper.

Ingredients For pineapple and orange salad with toasted coconut

  • 2 c
    orange sections (about 4 oranges)
  • 1/2 c
    pomegranate arils
  • 4
    kiwifruit, peeled and sliced
  • 1
    pineapple, peeled and cut into 1-inch cubes (about a 4 pound pineapple)
  • 1 tsp
    lime zest
  • 1 Tbsp
    fresh lime juice
  • 1 Tbsp
    fresh orange juice
  • 1/8 tsp
    ground red pepper
  • 1/2 c
    flaked, sweetened coconut, toasted and divided

How To Make pineapple and orange salad with toasted coconut

    Combine the first 4 ingredients in a medium bowl. Combine thezest and next 3 ingredients (through the pepper) in a small bowl.

    Gently stir the lime mixture into the fruit mixture; cover and chill.

    Just before serving, stir 1/4 cup coconut into the pineapple mixture. Sprinkle 1/4 cup coconut over the top.
