Ingredients For pineapple and orange salad with toasted coconut

2 corange sections (about 4 oranges)

1/2 cpomegranate arils

4kiwifruit, peeled and sliced

1pineapple, peeled and cut into 1-inch cubes (about a 4 pound pineapple)

1 tsplime zest
-
1 Tbspfresh lime juice

1 Tbspfresh orange juice

1/8 tspground red pepper

1/2 cflaked, sweetened coconut, toasted and divided
How To Make pineapple and orange salad with toasted coconut

1Combine the first 4 ingredients in a medium bowl. Combine thezest and next 3 ingredients (through the pepper) in a small bowl.

2Gently stir the lime mixture into the fruit mixture; cover and chill.

3Just before serving, stir 1/4 cup coconut into the pineapple mixture. Sprinkle 1/4 cup coconut over the top.
