We had this for dinner last night with fried catfish and potato salad. Refreshingly good!!

Ingredients For peach salsa salad

1tomato
-
2green onions
-
1fresh peach or canned in own juice

1 ccottage cheese, large curd

1 pinchsea salt

1 dashground pepper
-
1 pinchdill weed, fresh, chopped

bunchcilantro, fresh, chopped

dasholive oil, extra virgin

dashfresh lemon juice
How To Make peach salsa salad

1Chop fresh tomato, peach and 2 green onions into small pieces

2Add salt, pepper, chopped dill weed and cilantro to above mixture.

3Splash in a dash of lemon juice and olive oil. Mix all together and let sit for 10 minutes.

4Put 1/2 cup cottage cheese into individual side dish, place half of salsa on top and serve! Makes two servings. Additional servings can be made adding addional ingredients. Can also be served to a group by placing cottage cheese in a serving bowl and putting salsa on top. I also put 1 tsp of sugar in the salsa since my husband like it a bit sweeter.
