I went to a cooking demo at my library to see how they do it - I am doing a class in September. This recipe was presented by the RD (registered dietitian) from the local supermarket. I made it that night with a few modifications to bring to a pool party today. It was a huge hit, something different!

Ingredients For peach, basil and red onion salad

  • 3
    peaches, skin off or on, your choice, sliced 1/2-inch thick
  • 1/4 c
    red onion, slices very thinly
  • 1/4 c
    fresh basil leaves, torn
  • juice of 1/2 lemon
  • 1/2 tsp
    coarse sea salt
  • freshly ground black pepper
  • 1 Tbsp
    extra virgin olive oil
  • 2 tsp
    honey

How To Make peach, basil and red onion salad

    Toss the peaches with the red onion, basil, lemon juice, honey, salt and pepper. Drizzle with olive oil.

    Note: Make this a meal by adding grilled chicken breast.
