Ingredients For minty watermelon, cucumber, and mango salad

8 cwatermelon, seedless

1cucumber halved lengthwise and thinly sliced

2champagne mango peeled and cubed (2 1/2 cups)

4green onions chopped

1/3 cmint, fresh

1/3 cpecans, in pieces, chopped

2 Tbspextra virgin olive oil

2 Tbspwhite balsamic vinegar

How To Make minty watermelon, cucumber, and mango salad

1In a large bowl, gently combine the watermelon, cucumber, mango, onions, mint, and nuts. In a small bowl, whisk oil, vinegar, and salt. Pour over watermelon mixture; toss to coat. Serve immediately or cover and refrigerate for up to 2 hours.
