This is a salad which can be used as a main dish as it contains chicken, spinach, vegetables and fruit. It is soooo tasty and a cool dish for a hot summer's night.

Ingredients For mandarin pasta salad

8 ozbow tie pasta

1/2 lgcucumber
-
1/2 cdiced red bell pepper

1/2 ccoarsely chopped red onion

1 pkg6oz. fresh baby spinach leaves

1 can11 oz. mandarin orange segments, drained

2 cdiced cooked chicken
-
1/2 csliced almonds, toasted
-
1 tspfinely chopped, peeled fresh ginger root

1 clovepressed garlic
-
1/3 crice vinegar or white wine vinegar

1/4 corange juice, fresh
-
1/4 cvegetable oil
-
1 tspsesame oil
-
1 pkglipton onion soup mix (envelope)

2 tspwhite sugar
How To Make mandarin pasta salad

1Start with the dressing. Finely chop gingeroot . In small bowl, whisk gingerroot, garlic, vinegar, orange juice, vegetable oil, sesame oil, soup mix & sugar. Cover, refrigerate until ready to use.

2For salad, cook pasta according to package, drain and rinse under cold running water. Place pasta in large bowl. Meanwhile score cucumber with a fork, remove seeds using a corer, slice cuke and cut slices in half. Dice bell pepper, coarsely chop onion. Add cuke, bell pepper, onion, spinach, mandarin oranges, chicken and almonds to pasta. Pour dressing over salad and toss. Serve immediately.
