My cousin shared this recipe with me years ago, and it's always been a favorite. It's as pretty on the plate as it is refreshing. Better made the night before.

Ingredients For mandarin orange jello salad

  • 1 pkg
    lemon gelatin
  • 1 pkg
    orange gelatin
  • 2 c
    hot water
  • 2
    diced bananas
  • 1 can
    crushed pineapple, drained (reserve juice for topping)
  • 1 c
    miniature marshmallows
  • 1 or 2 can
    mandarin oranges, drained
  • 1
    egg
  • 1/2 c
    sugar
  • 2 Tbsp
    butter
  • 2 Tbsp
    flour

How To Make mandarin orange jello salad

  • 1
    Dissolve gelatin in hot water. Add 1 1/2 cups cold water. When gelatin has thickened, but not set, add bananas and crushed pineapple.

    Fold in marshmallows and oranges. Pour into 9" X 13" pan and return to refrigerator.

    After gelatin is set: Cook 2 tbsp flour, 1 egg slightly beaten, 1/2 cup sugar, and 1 cup pineapple juice. Cook until thickened. Add 2 tbsp butter.

    After this mixture is cold, add 1 cup whipping cream (whipped with juice of one lemon).

    Spread over top of gelatin, and keep chilled.
