Ingredients For lighter chicken waldorf salad

3/4 lbchicken breast, roasted

3 Tbspwalnuts, coarsely chopped

1 tspmustard, grainy

2 Tbspchutney, mango
-
2 Tbsplime juice

csour cream, nonfat

cmayonnaise, light

2 Tbspginger, candied and minced

1mango, peeled and diced

1celery stalk, finely chopped

1apple, Granny Smith, cored and diced into 1/2" pieces

2 Tbspmint, fresh minced
How To Make lighter chicken waldorf salad

1Dice the cooked chicken; combine with the apple, celery, mango and candied ginger.

2In a medium bowl, combine the mayonnaise, sour cream, lime juice, chutney and mustard; mix well.

3Add to the salad, mixing well.

4Cover and refrigerate until ready to serve.

5Just before serving, stir in the chopped walnuts and mint.

6NOTE: Candied or sugared ginger can be found in the Asian section of major supermarkets.
