My family calls this Funeral Salad, because that is where I tracked it down! It is a favorite. I had lost this recipe and it took me 10 years to find again through a friend I had given it to!

Ingredients For heavenly salad

  • 6 oz
    lemon jell-o
  • 1 c
    hot water
  • 1 1/2 c
    marshmallows, mini
  • 9 oz
    crushed pineapple (reserve juice)
  • 6 oz
    reserved pineapple juice (add water if there isn't enough)
  • 2 lg
    apples, cored, diced, not peeled
  • 3/4 c
    pecan pieces
  • topping:
  • 3/4 c
    sugar
  • 2
    eggs
  • 2 Tbsp
    lemon juice, fresh
  • 1 3/4 c
    cool whip

How To Make heavenly salad

  • 1
    Dissolve jell-o in hot water. Add marshmallows and stir till melted; remove from heat. Stir into a 13x9" pan and stir in pineapple juice. Chill until partially set.

    Add remaining ingredients and allow it to completely set.

    For topping cook sugar, eggs and lemon juice over very low heat; stirring constantly until thick. When cooled, fold in Cool Whip and spread on top of jell-o mixture. Refrigerate until ready to serve.
