Ingredients For harvest mixed green salad w/ cranberry dressing

12 corganic mixed greens, like olivias.

2 Tbspor to taste, cranberries, preferably fresh, not frozen

2 tspminced garlic from a jar

1minced shallot
-
3 Tbspolive oil
-
1 Tbspred wine vinegar

1 Tbspmaple syrup, preferably real, organic syrup

1 Tbspdijon mustard
-
sea salt and pepper to taste

1/4 ctoasted pumpkin seeds
How To Make harvest mixed green salad w/ cranberry dressing

1Place greens in lg bowl. In small saucepan, bring some water, ( about 1/2 way full,) to a boil. Remove pan from heat, add cranberries. Let sit about 5 mins, drain.

2Chop cooled cranberries. In skillet, over medium heat, saute garlic and shallot in 1 tbsp oil until soft. Add cranberries, vinegar, maple syrup, mustard and remaining oil.

3Remove from heat and season w/ salt and pepper. Drizzle over greens, toss to coat. Sprinkle salad w/ pumpkin seeds.
