This is the best darn chicken salad I have had in a long time and thought you all might like to try it... It's fresh and crunchy and so refreshing for lunch or dinner- on these warm summer days- what am I saying it's darn right "HOT" here and many other places too! Give this a try you will love it or my name isn't "Kitchen Chatter" lol Recipe on the back of my Sun-Maid Raisins.

Ingredients For fruited chicken salad

3/4 csun-maid tropical trio or fruit bits or golden raisins

1/3 cwhite grape juice or apple juice

1/2 clight or regular mayonnaise or miracle whip salad dressing

1 Tbspmustard, spicy brown or dijon honey mustard

3 cdiced, cooked chicken or turkey
-
1/3 cthinly sliced green onions

1/3 cslivered almonds, toasted

How To Make fruited chicken salad

1Combine fruit and grape juice in a small saucepan and bring to a simmer. Stir. Refrigerate for 15 minutes.

2Mix together mayo and mustard in a medium bowl. Add chicken, green onions and almonds. Mix well. Stir cooked fruit into chicken mixture. Serve over salad greens as a main dish salad or in a pita pocket or on whole wheat bread as a sandwich filling.

3Variation: For fruited Curried chicken Salad, add 1 teaspoon curry powder to the mayo mixture. --- Cal: 460; protein 33g;(Sat. Fat 4g); Carbs 33g; Fiber 2g; cholesterol 105mg; Sodium 440mg.
