Great little salad without frogs! It's a very cool and refreshing dish that my sister introduced to me last year. She usually sends some over whenever she makes it. I don't make it often because my husband doesn't particularly care for it and I can't eat but so much! So there you go.

Ingredients For frog-eye salad

  • 3/4 c
    sugar
  • 3/4 tsp
    salt
  • 1/2 c
    pineapple juice
  • 1 Tbsp
    self-rising flour
  • 1
    egg, beaten
  • 1 tsp
    lemon juice
  • 1/2
    bag of davinci (acini di pepe) pasta
  • 2 sm
    cans mandrain oranges, drained
  • 4 oz
    cool whip
  • 1/4 c
    fine coconut (optional)

How To Make frog-eye salad

  • 1
    In saucepan, combine first 5 ingredients & cook over medium heat until thickened. Remove from heat & add lemon juice; stir then let cool to rm temp.

    Cook pasta, using pkg directions, then drain & gently mix with first mixture.

    Add remaining ingredients and chill before serving.

    FYI: The pasta is the frog eyes.
