Great little salad without frogs! It's a very cool and refreshing dish that my sister introduced to me last year. She usually sends some over whenever she makes it. I don't make it often because my husband doesn't particularly care for it and I can't eat but so much! So there you go.

Ingredients For frog-eye salad

3/4 csugar
-
3/4 tspsalt

1/2 cpineapple juice

1 Tbspself-rising flour
-
1egg, beaten
-
1 tsplemon juice
-
1/2bag of davinci (acini di pepe) pasta

2 smcans mandrain oranges, drained

4 ozcool whip
-
1/4 cfine coconut (optional)
How To Make frog-eye salad

1In saucepan, combine first 5 ingredients & cook over medium heat until thickened. Remove from heat & add lemon juice; stir then let cool to rm temp.

2Cook pasta, using pkg directions, then drain & gently mix with first mixture.

3Add remaining ingredients and chill before serving.

4FYI: The pasta is the frog eyes.
