Ingredients For diabetic waldorf salad

  • 2 c
    coarsely shredded cabbag
  • 1/2 c
    sliced celery
  • 4 Tbsp
    each finely chopped raisins and walnuts
  • 1/4 c
    low-fat plain yogurt
  • 2 Tbsp
    light mayonnaise
  • 1/2 tsp
    fresh lemon juice
  • 2 c
    chopped apples (2 medium)
  • salt and freshly ground pepper as needed

How To Make diabetic waldorf salad

  • 1
    In bowl, combine cabbage, celery, raisins and walnuts. In small bowl, whisk together yogurt, mayonnaise and lemon juice; stir into cabbage mixture. Season with salt and pepper to taste.

    Cover and refrigerate for at least 30 minutes, then stir in apples just before serving.
