Ingredients For diabetic waldorf salad

2 ccoarsely shredded cabbag

1/2 csliced celery

4 Tbspeach finely chopped raisins and walnuts

1/4 clow-fat plain yogurt

2 Tbsplight mayonnaise

1/2 tspfresh lemon juice

2 cchopped apples (2 medium)

salt and freshly ground pepper as needed
How To Make diabetic waldorf salad

1In bowl, combine cabbage, celery, raisins and walnuts. In small bowl, whisk together yogurt, mayonnaise and lemon juice; stir into cabbage mixture. Season with salt and pepper to taste.

2Cover and refrigerate for at least 30 minutes, then stir in apples just before serving.
