This salad is refreshing! A delicious marriage of sweet and tart, this dish combines a variety of various textures and is pleasingly colorful! While you do have to mix the cranberries, marshmallows and sugar the night before, it's easy to toss together in minutes. Just about everyone asks for the recipe and they are surprised to find out how simple it really is! Use your favorite type of nuts, or a mixture. (I personally love pecans!) :-) Enjoy!

Ingredients For cranberry-mallow salad

  • 2 c
    ground raw cranberries
  • 4 c
    mini marshmallows
  • 1/2 c
    sugar
  • 1/4 c
    chopped apple (your favorite variety)
  • 1 c
    crushed pineapple (drained)
  • 1 c
    whipping cream, whipped
  • 1 c
    nuts (coarsely chopped)
  • whipped topping to garnish (optional)

How To Make cranberry-mallow salad

  • 1
    Mix cranberries, marshmallows and sugar in bowl. Cover and let stand overnight (or at least 6-8 hours until marshmallows have thoroughly softened) in refrigerator.

    Remove from refrigerator gently toss in apple, pineapple and nuts.

    Fold in whipping cream (whipped) and serve. You may add a dollop of sweetened whipped cream (or other whipped topping) and a few fresh cranberries on top to garnish.
