My Granny, Clara Walker, would make this wonderful salad for every holiday. This salad is so refreshing and addictive. One year I took it to many different friends and Dr's offices as a way of saying Thank You for your friendship and services. Well, I got a heaping helping of "Oh, my goodness, I must have that recipe"! And "Please make more and we will buy it from you"! lol Yep, it is that good. The secret is the processing of the whole orange, yep the whole entire orange ! It is tangy, sweet and crunchy. This is not your canned cranberry salad. As soon as the cranberries come into the stores I make this recipe and I quadruple it ! It stores well for about 2 weeks, but it won't last that long ! Enjoy

Ingredients For clara's cranberry salad

    bag of fresh cranberries
  • 2
    whole oranges
  • 1 can
    small can of crushed pinepple
  • 2 c
    sugar
  • 1
    large (6oz) box of cherry jello
  • 1 1/2 c
    boiling water
  • 1 c
    pecans

How To Make clara's cranberry salad

    In a food processor or blender process the cranberries until well chopped, not to small, not to big.

    Pour into a really large bowl.

    Cut the whole orange into slices, remove seeds. Process in food processor till really smooth. No chunks hardly at all. Remove any pieces of rind that did not break down.

    Pour into bowl with cranberries.

    Add the crushed pineapple, juice and all, to the cranberry mixture.

    Add the 2 cups of sugar and let sit for around 15 min. or until the juices are pulled from the cranberries.

    Meanwhile, boil the water in a pyrex container in the microwave. Add the cherry jello and mix till dissolved.

    Add the jello mixture, it does not need to cool, to the cranberry and sugar mixture. Stir well to incorporate.

    Stir in chopped pecans. You might want to give them a quick whirl in the food processor. Then add them.

    Have several pretty bowls or tupperware containers with lids ready. Pour in the cranberry mixture. This makes many portions and it just depends on bowl size as to how many you will have.

    Sprinkle the top with any extra nuts and garnish with a cranberry or two.

    This recipe doubles really well, just make sure you have a big enough bowl.

    **Before I add the sugar to the big bowl I have taken out a portion and used Splenda for my diabetic guest and it works really well.
