I love a healthy salad with a kick of citrus. My photo is with a side of julienned zucchini. Dressing photo is with lemon juice. When choosing the lime, you will notice the change in hue.

Yum! This citrus salad is different and delightfully refreshing. With a honey-citrus flavor and a mild Dijon tang, we loved the salad dressing. The mix of greens with sweet clementines and pomegranate arils (seeds) is so delicious. Feta cheese crumbles and sunflower seeds add a little salt that balances the sweetness of the fruit. For extra flavor, add grilled chicken to the top for a complete meal. This salad makes healthy taste good.

1For Dressing: Mix the last six ingredients to make your dressing.

2Chill.

3For Salad: Prepare greens, radishes, and clementines. I use a mix of mixed greens, kale, spinach.

4Remove pomegranate arils.

5Place greens in a bowl with salad ingredients.

6Optional, top with a cooked chicken breast.

7Drizzle dressing over salad.
