My mother taught me to make Waldorf Salad and I used to make it every Thanksgiving. Adding chicken can make it a light summer lunch! And it's a great way to use up leftover chicken.

Ingredients For chicken waldorf salad
- PREPARE APPLES

6red delicious apples, cored, cut into bite-sized chunks

1lemon, halved
- DRESSING

2 cmayonnaise
-
1 tsplemon juice
-
1 Tbspsugar
- INGREDIENTS

1bag walnuts, chopped
-
1 1/2 craisins
-
2stalks celery, chopped
-
1 1/2 cchicken, cooked, cut into bite-sized chunks
How To Make chicken waldorf salad

1Core the apples. Cut into bite-sized chunks. You can peel them, but I like to leave the peel on. It adds a nice color to the salad.

2As you cut up the apple, place chunks in large bowl of water with juice of 1/2 lemon added to the water, to prevent browning.

3In another bowl, combine mayonnaise, tsp. lemon juice & sugar. Mix well.

4Drain apples.

5Combine remaining ingredients with apples & mayo mixture.

6Chill before serving.
