My family loves this simple salad from Elizabeth Powell. It also travels well for picnics in a thermos.

Ingredients For cherry tomato salad

1 ptcherry tomatoes

6 slicebacon

1/4 cmayonnaise

1 Tbsptarragon vinegar

2 Tbspolive oil

1/4 tspsalt

1 Tbspfresh basil, chopped

6romaine lettuce leaves

2 Tbspchives, chopped
How To Make cherry tomato salad

1Wash and stem tomatoes. Dry completely.

2Cook bacon until very crisp; drain thoroughly on paper towels.

3Mix mayonnaise, vinegar, olive oil, salt, and basil. Pour over tomatoes, crumble bacon over all, and stir to coat tomatoes with dressing. Serve on lettuce leaves, sprinkled with chives.

4Serve at once or refrigerate until ready to serve.
