I usually make this in large amounts for family gatherings but I have scaled it down for posting here. There is a good variety of tastes and textures in this salad and you can easily adjust the proportions of the ingredients to personal taste. I think it is best when made the day before needed and kept in refrigerator overnight.

Ingredients For carrot almond salad

1 lbcarrots

2 mdgranny smith apples

1 calmonds
-
1 cblack sun-dried raisins

2 Tbsplemon juice

2 tspbutter

3/4 cmayonnaise
How To Make carrot almond salad

1Cube the apples, unpeeled. Place in just enough cold water to cover with the lemon juice added. Let them sit until all other ingredients ready. Drain just before adding.

2Saute almonds in butter until light brown. Place on paper towel to drain.

3Peel and shred carrots.

4Add carrots, almonds, raisins, and apples to a large bowl. Mix in mayonnaise.

5Ready to serve immediately, or keep covered in refrigerator overnight.
