Over 20 years ago, I worked with a lady named Beulah who brought this salad to our office Thanksgiving dinner. It's the best I've ever eaten and my family has insisted on having it at every Thanksgiving, since.

Ingredients For beulah's cranberry salad

  • 1
    orange and half the peel
  • 1 lb
    cranberries
  • 2 c
    sugar
  • 1 pkg
    strawberry jello (large)
  • 1 c
    chopped pecans
  • 1 c
    chopped apple
  • 1 c
    crushed pineapple, well drained
  • 1 c
    chopped celery

How To Make beulah's cranberry salad

  • 1
    Grind cranberries, orange, and half the peel. Pour 2 cups sugar over cranberry mixture and let sit.

    Prepare strawberry jello. When half set, add to the cranberry mixture.

    Add nuts, apples, pineapple and celery to the cranberry-jellow mixture. Return to the refrigerator to set.
