Ingredients For baja watermelon & jicama salad

1 1/2 Tbspfresh lime juice

1 1/2 Tbspfresh orange juice

1/2 Tbsphoney

2 Tbspcoconut milk

1 Tbspvegetable oil

1 1/2 cdiced watermelon

1 1/2 cdiced jicama

3 Tbspshredded coconut, toasted

1/4 cfinely minced red onion

1serrano pepper, seeded and finely minced

3 Tbspchopped fresh cilantro leaves (plus cilantro sprigs, for garnish)

How To Make baja watermelon & jicama salad

1In a large mixing bowl, combine lime juice, orange juice, honey, coconut milk, and oil. Mix well. Add watermelon, jicama, coconut, onion, serrano, and cilantro; toss until well combined. Season, to taste, with salt and pepper. Serve room temperature or chilled. Garnish with cilantro sprigs.
