Ingredients For arugula salad

1 bunchbaby arugula
-
vinaigrette salad dressing (recipe follows)

1/3 cspiced nuts

1fresh pear, sliced into 1/4 inch pieces

dried cranberries, to taste

good quality blue cheese, to taste, crumbled

1/4 cbalsamic vinegar
-
1 Tbspbrown sugar
-
1 Tbspfresh lemon juice
-
1 Tbspdijon mustard

salt, to taste

3/4 colive oil
How To Make arugula salad

1For the Vinaigrette: Combine the balsamic vinegar,brown sugar, lemon juice, dijon mustard,salt and olive oil in blender and blend for a few seconds until well blended.

2For the Arugula Salad: Toss arugula in just enough vinaigrette to moisten the leaves. Add spiced pecans, pears and cranberries.

3Place salad on each serving plate and set a wedge of tart over top. Sprinkle with crumbled blue cheese.
