Recently, we had dinner at a little country restaurant. They served a delicious apple salad. I couldn’t fine anything that suited on the web so I had a try at making it myself. I think I would like the pecans in it, but hubby doesn’t like nuts in salads. Oh well.

Ingredients For apple salad

  • 1
    apples, granny smith
  • 2
    fuji apples
  • juice from 1/2 lemon
  • 1 c
    pineapple tidbits, drained (save juice)
  • 1/2 c
    raisins
  • 1 c
    chopped pecans or dried cranberries (optional)
  • FOR DRESSING:
  • 3 Tbsp
    mayonnaise
  • 1 Tbsp
    pineapple juice
  • 1 tsp
    cinnamon
  • 1 dash
    nutmeg
  • 1/2 tsp
    vanilla (optional)

How To Make apple salad

  • 1
    Chop apples and mix with lemon juice.

    Add pineapple and raisins.
  • 3
    Add pecans or cranberries if desired
  • 4
    Mix mayonnaise, pineapple juice, cinnamon, and nutmeg. Add vanilla if desired.

    Mix fruit and dressing. Store in a covered container. Refrigerate a couple of hours before serving.
