apple-craisin salad

This lovely salad came from a church friend. Everyone seems to love it. It can be doubled or tripled for more servings. Re the yogurt: I have used the plain, non-fat called for in the recipe, but in a pinch I've also used non-fat vanilla, pineapple, or most any white-colored yogurt.

Ingredients For apple-craisin salad

  • 1
    each, fugi and golden delicious apples, cut into 8ths, then sliced into small bite sized pieces
  • ~~
    fruit fresh, to keep apples from browning
  • 1/4 c
    each, mayo and plain non-fat yogurt
  • 1/2 c
    craisins (dried cranberries)
  • 1/3 c
    diced celery
  • 2 tsp
    sugar or splenda
  • 1/2 tsp
    salt
  • 1/2 tsp
    lemon juice

How To Make apple-craisin salad

  • 1
    Chop the apples and sprinkle with Fruit Fresh (or dip them a solution of fruit fresh and water) to prevent browning.

    Add the craisins and celery to the apples. Mix together the mayo, yogurt, sugar or Splenda, salt and lemon juice, gently stir into the apples.

    Chill and enjoy. Refrigerates nicely for a couple days.
