My son and roommates love this recipe, especially on a croissant.

Grilling the chicken really makes this chicken salad something special. The smoky grilled flavor mixes well with the Dijon mustard and seasonings. Chopped walnuts add a nice nutty crunch. Then there are pops of sweetness from the red grapes. The flavors in this delicious chicken salad are well-balanced. Serving it on a croissant with avocado makes this a lovely meal.

Ingredients For walnut and grape chicken salad supreme

  • 2 1/2 c
    grilled chicken breasts, cut into bite-sized chunks
  • 1/3-1/2 c
    mayonnaise
  • 1/4 c
    Dijon mustard
  • 1 1/2 stalk
    celery, diced
  • 1 c
    seedless red grapes, halved
  • 1/2 c
    walnut halves, rough chopped
  • 1 tsp
    dried thyme
  • salt and pepper, to taste
  • 6-8
    lettuce leaves
  • 3-4
    slices of avocado per sandwich

  • Grilling chicken breasts.

    Grill the chicken.
  • Chopping the grilled chicken.

    Once the chicken has been grilled, chop.
  • All ingredients in a bowl.

    In a medium mixing bowl, add all ingredients (except avocado and lettuce).
  • Ingredients mixed and ready to refrigerate.

    Mix well. Make sure that all the chicken is coated. Let set in refrigerator until well chilled. Serve on a croissant with lettuce and avocado.
