Around here this is a Summertime staple. Sometimes I throw in grapes, or other bits-and-bobs. I suggest using the base ingredients in this recipe as a foundation, and chuck in whatever suits your fancy. So, you ready… Let’s get into the kitchen.

Ingredients For summer essentials: honeyed chicken salad

  • PLAN/PURCHASE
  • THE CHICKEN SALAD
  • 8 oz
    chicken breasts, cooked and diced
  • 3/4 c
    celery, small dice
  • 1/2 c
    mayonnaise, plain variety
  • 1/2 c
    dried cranberries
  • 1/4 c
    sour cream
  • 1/4 c
    pecans, chopped
  • 2 Tbsp
    fresh clover honey
  • ADDITIONAL ITEMS
  • 1/4 tsp
    white pepper, freshly ground
  • 1 - 2 pinch
    salt, kosher variety, fine grind
  • OPTIONAL ITEMS
  • 1 - 2 dash
    hot sauce, i prefer frank’s

    Chicken Breasts No chicken… No worries. I have made this recipe with turkey breasts, pork; even ham. Chopped Pecans Pecans are good; however, use what you have. And, to amp things up a bit, toast them before adding to the chicken salad. Dried Cranberries The cranberries give this recipes bites of sweet; however, raisins would work, or possibly other chopped dried fruit. Have fun with it.

    I love adding a drop or two of hot sauce to this recipe, just to give it a bit of kick.

    Gather your ingredients (mise en place).

    Add all the chicken salad ingredients to a bowl, and gently fold them together.

    Cover, and place in the fridge for a couple of hours (to give the flavors a chance to mingle).
