I had a similar salad at the Stockyards in Texas and came home and made this one. We LOVE it !

Ingredients For stockyard salad

  • mixed salad greens
  • cherry tomatoes
  • purple onion slices
  • original small size frito corn chips
  • 2 can
    pinto beans with jalapenos, heated
  • sliced chicken (i use rotiserie, grilled, or baked)
  • 1 bottle
    jalapeno or peppercorn ranch dressing
  • cheddar cheese, shredded

How To Make stockyard salad

  • 1
    prepare on individual plates at time to serve
  • 2
    on each place put greens and a few cherry tomatoes around the side and pretty purple onion slices in rings on top
  • 3
    sprinkle with a hand full of fritos.

    Use a large serving size slotted spoon to get a generous size amount of hot pinto beans and put on top
  • 5
    add warm chicken (I have pulled apart with hands) amount to equal about a breast
  • 6
    drizzle with dressing
  • 7
    top with generous handfull of shredded cheddar
