Where I used to live, there was a restaurant that made a wonderful salad with most of these ingredients. This is an embellished fusion version of it. If the chimichurri is made with cilantro, all the better!

Ingredients For santa fe chicken salad

  • 2 c
    chopped romaine lettuce
  • 4 oz
    grilled chicken breast or rotisserie chicken
  • 1/4 c
    black beans, canned
  • 2 Tbsp
    frozen corn, thawed
  • 1 Tbsp
    red onion, minced
  • 4
    cherry tomatoes, halved
  • 1/4 sm
    avocado, diced
  • 2 Tbsp
    cotija cheese, crumbled
  • 1-2 tsp
    sour cream, lite or regular
  • 1-2 tsp
    lime juice
  • 1 Tbsp
    chimichurri sauce, taco sauce or favorite salsa
  • crispy tortilla strips, or crumbled tortilla chips for garnish

How To Make santa fe chicken salad

  • 1
    Line large plate with romaine. Slice or shred chicken and place on lettuce.
  • 2
    Distribute beans, onions, corn, tomatoes and avocado over chicken. Sprinkle cotija cheese over top.

    Thin sour cream with lime juice so it's pourable. Zig-zag sour cream across salad. Zig-zag chimichurri sauce across salad in opposite direction. Garnish with crispy tortilla strips.
