Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Janey and Booth Outlan.

Ingredients For orange chicken salad

1 lbchicken breast

3 csnow peas
- VINAIGRETTE

1/2 corange juice

1/4 cfresh lime juice

1/2 cchicken broth
-
1dollop of honey

1 tspsoy sauce

1/3 colive oil
How To Make orange chicken salad

1Poach chicken breasts, then slice into bite size pieces.

2Blanch snow peas and "julienne" (cut into thin slices).

3Vinaigrette: Reduce orange juice, lime juice, chicken broth and honey to a thick syrup; add soy sauce and olive oil.

4Heat up vinaigrette and pour over chicken and snow peas.

5Season with fresh ground pepper or white pepper. Serve garnished with orange zest and orange wedges.
