I came up with this recipe one night after having a taste for Lemon Pepper Chicken during my weight loss program. It turned out great and in the end I lost 40 pounds.

Ingredients For lemon pepper chicken salad

2 canchicken breast, 12 oz.

3green onions, chopped, including green portion.

1/2 ccelery, chopped small.

1 1/2 tsppoultry seasoning
-
1 1/2 tspcourse black pepper
-
1lemon
-
2- 2 1/2 Tbsphellmenn's mayonaise with olive oil
How To Make lemon pepper chicken salad

1Directions: Squeeze out as much water as you can from the Chicken Breast and place into a med. Size bowl or container with lid. Grate zest from lemon and add to bowl. Squeeze lemon and add 1/2 of the juice (no seeds please) to the bowl. Add all of the other ingredients and mix well. Add more Lemon juice to taste after chilling if desired. Chill 1-2 hours and serve.
