I love chicken salad especially if it has a great texture & is tasty too. I do not like my chicken swimming in mayo but rather just enough to hold it all together. I enjoy the addition of cranberries & nuts that gives this salad even more flavor. This one is packed with protein for sure. Hope you enjoy.

Ingredients For kim's simple chicken salad

  • 3 sm
    chicken breast filets
  • 1/4 md
    onion
  • 1/4 md
    orange bell pepper
  • 1/2 md
    dill pickle, cold packed clausen
  • 2 Tbsp
    lemon juice
  • 1 sm
    cashews & almonds (handful)
  • 2 Tbsp
    dried cranberries
  • onion salt, to taste
  • pepper
  • 1/4 c
    mayonnaise, approx (forgot to measure)

How To Make kim's simple chicken salad

    Add your cut up chicken to the Power Chef and/or food processor to shred up quickly. Add remaining ingredients and chop till desired consistency. Stir in the seasonings and taste. Add more to your liking.

    I make this salad and eat it wrapped inside romaine lettuce leaves or any other kind of lettuce that will roll up easily. I have an allergy to wheat, so I am trying alternative ways to eat my favorite foods by omitting bread.
