hot chicken fillet salad

I've been making this recipe for many years and I never tire of it. The combination of the lettuce, tomato and, avocado is wonderful with the chicken breasts. The dressing is so yummy, it really does compliment the whole dish!

Ingredients For hot chicken fillet salad

1/2 clight oil

1/4 capple cider vinegar

1/3 csugar

1/4 tspdry mustard

1/4 tspsea salt
- FOR THE SALAD

2 lgchicken breasts, boneless and skinless

3 Tbspflour
-
1/2 tspsea salt
-
1/8 tspblack pepper
-
1/4 cmargarine or butter
-
4 clettuce, red and green
-
16cherry tomatoes - halved
-
1avocado - cubed
How To Make hot chicken fillet salad

1TO MAKE THE SWEET AND SOUR DRESSING: Get yourself a jar with a tight-fitting lid. I used a Mason Jar.

2Combine the first 5 ingredients in the recipe. Shake very well.

3Refrigerate for at least 1 hour before using.

4TO MAKE THE CHICKEN: Place one of the large chicken breasts into a freezer bag and pound it to around 1/4" thick. Repeat with the second chicken breast.

5In a shallow bowl combine the flour, salt, and pepper. Give this a good stir with a whisk. Coat the chicken breasts on both sides.

6Heat a large skillet on medium heat. When hot place the chicken breasts into the skillet and cook them 10-12 minutes flipping the breasts over around the 5-6 minute mark. Make sure all the pink is gone.

7I heated my toaster oven to "keep warm" and put the chicken breasts on a tray and into the toaster oven until I was ready to assemble the salad.

8Put the lettuce on your platter. Cut the cherry tomatoes in half and spread around on top of the lettuce. Cut the avocado in half and remove the pit and discard. Cut the avocado up into cubes or slices.

9Put the avocado on top of the lettuce and cherries.

10Get the chicken out of the toaster oven and slice it crosswise. Lay the slices over the salad mixture.

11Let everyone help themselves. Top with the Sweet & Sour Dressing.
