I've been making this recipe for many years and I never tire of it. The combination of the lettuce, tomato and, avocado is wonderful with the chicken breasts. The dressing is so yummy, it really does compliment the whole dish!

Ingredients For hot chicken fillet salad

  • 1/2 c
    light oil
  • 1/4 c
    apple cider vinegar
  • 1/3 c
    sugar
  • 1/4 tsp
    dry mustard
  • 1/4 tsp
    sea salt
  • FOR THE SALAD
  • 2 lg
    chicken breasts, boneless and skinless
  • 3 Tbsp
    flour
  • 1/2 tsp
    sea salt
  • 1/8 tsp
    black pepper
  • 1/4 c
    margarine or butter
  • 4 c
    lettuce, red and green
  • 16
    cherry tomatoes - halved
  • 1
    avocado - cubed

How To Make hot chicken fillet salad

    TO MAKE THE SWEET AND SOUR DRESSING: Get yourself a jar with a tight-fitting lid. I used a Mason Jar.

    Combine the first 5 ingredients in the recipe. Shake very well.

    Refrigerate for at least 1 hour before using.

    TO MAKE THE CHICKEN: Place one of the large chicken breasts into a freezer bag and pound it to around 1/4" thick. Repeat with the second chicken breast.

    In a shallow bowl combine the flour, salt, and pepper. Give this a good stir with a whisk. Coat the chicken breasts on both sides.

    Heat a large skillet on medium heat. When hot place the chicken breasts into the skillet and cook them 10-12 minutes flipping the breasts over around the 5-6 minute mark. Make sure all the pink is gone.

    I heated my toaster oven to "keep warm" and put the chicken breasts on a tray and into the toaster oven until I was ready to assemble the salad.

    Put the lettuce on your platter. Cut the cherry tomatoes in half and spread around on top of the lettuce. Cut the avocado in half and remove the pit and discard. Cut the avocado up into cubes or slices.

    Put the avocado on top of the lettuce and cherries.

    Get the chicken out of the toaster oven and slice it crosswise. Lay the slices over the salad mixture.

    Let everyone help themselves. Top with the Sweet & Sour Dressing.
