Ingredients For crunchy chicken salad

  • 2
    chicken breast halves, skinless and boneless
  • 1 cup c
    mayonnaise
  • 1/2 stalk
    celery, diced small
  • 4 c
    chicken broth
  • 1/4 c
    almonds,sliced
  • 1/4 c
    pecan, chopped
  • 1/4 c
    cranberries, dried
  • 1
    scallion diced small

How To Make crunchy chicken salad

  • 1
    Boil the chicken breast in the 4 cups of chicken broth about 20-30 mins, till tender.

    drain, let cool and chop up.
  • 3
    combine with the rest of the ingredients...adjust to your taste.

    refrigerate at least 1 hour...ENJOY with lettuce, crackers or bread.
