Even those who say "I don't care for chicken salad" love this version! It's a bit more work, but worth it for the flavor.

Ingredients For grape pecan chicken salad

6large boneless/skinless chicken breasts – organic is truly best!

1/2 lbseedless red grapes – cut in half

1 cchopped pecans

1 cchopped celery
-
1 cmiracle whip salad dressing
-
1 1/2 chellmann’s mayonnaise (feel free to adjust to taste)

salt & pepper

olive oil
How To Make grape pecan chicken salad

1Generously salt & pepper the chicken breasts on both sides. Heat olive oil in a frying pan. Brown the chicken very well on both sides until there is a deep golden crust. Turn down the heat and allow to finish cooking until meat is white all the way through. Immediately chill in the fridge. (I'll do it the day before.)

2After the chicken is cooled, cube and/or shred the chicken into bite-size pieces. In a large mixing bowl, combine the Miracle Whip, Mayo, Pecans, Grapes & Celery. Blend well. Fold in the chicken. Test for salt.

3Best to make the salad the day before and allow it to sit for all the flavors to marry.

4Serving suggestion: Pile it on a croissant or in a pita.
