Ingredients For glass noodle salad

6 ozvermicelli noodles

2 cred cabbage, core removed and thinly sliced

1 cred peppers, julienned

1 lgcarrot, julienned
-
1/2 lgenglish cucumber, peeled and julienned

3 cpoached chicken breasts, shredded
-
2 lggreen onions, thinly sliced
-
1/2 cdry roasted peanuts, roughly chopped
-
1/4 csesame seeds, toasted

1/4 cchopped cilantro, for garnish

lime wedges, for serving
How To Make glass noodle salad

1In a large bowl filled with very hot water, place noodles and let them soak until soft, about 3 minutes.

2Using a fork or chopstick, separate them while they’re still in the water. Drain them well in a colander.

3To assemble the salad… Add softened vermicelli to a large salad bowl. Add shredded chicken, cabbage, red peppers, carrots, cucumber, green onions, peanuts and sesame seeds; toss until mixed.

4Sprinkle on cilantro and serve with your favorite dressing.
