This is a healthy chicken salad I ate almost everyday for 3 months. I hoped it would help bring my cholesterol down for my annual blood test. To my surprise it brought it down 40 points, plus I lost 10 pounds!

Ingredients For gail's chicken salad

3 -12.5 oz canchunk chicken breast in water

strawberries, fresh, sliced

nectarine, chopped

blueberries, fresh
-
orange segments, chopped
-
apple, chopped
-
onion, chopped
-
celery, chopped
-
dried berries (cranberries, cherries, blueberries)

sunflower seeds
-
pecans, in pieces
-
broccoli slaw mix
-
cilantro, fresh (optional)

1 Tbsporange marmalade (sugar free)

1 - 6 ozkey lime, lemon or orange flavor yogurt

1/2 cmayonnaise, fat-free
How To Make gail's chicken salad

1Open and drain chicken. Place chicken in a large bowl and break up chunks with fingers.

2Mix in desired amounts of fruits, vegs/slaw, nuts and cilantro.

3Mix marmalade, yogurt and mayo together; mix with other ingredients. Add more mayo until salad is desired consistency. Serve on whole wheat bread.
