This is a healthy chicken salad I ate almost everyday for 3 months. I hoped it would help bring my cholesterol down for my annual blood test. To my surprise it brought it down 40 points, plus I lost 10 pounds!

Ingredients For gail's chicken salad

  • 3 -12.5 oz can
    chunk chicken breast in water
  • strawberries, fresh, sliced
  • nectarine, chopped
  • blueberries, fresh
  • orange segments, chopped
  • apple, chopped
  • onion, chopped
  • celery, chopped
  • dried berries (cranberries, cherries, blueberries)
  • sunflower seeds
  • pecans, in pieces
  • broccoli slaw mix
  • cilantro, fresh (optional)
  • 1 Tbsp
    orange marmalade (sugar free)
  • 1 - 6 oz
    key lime, lemon or orange flavor yogurt
  • 1/2 c
    mayonnaise, fat-free

How To Make gail's chicken salad

    Open and drain chicken. Place chicken in a large bowl and break up chunks with fingers.

    Mix in desired amounts of fruits, vegs/slaw, nuts and cilantro.

    Mix marmalade, yogurt and mayo together; mix with other ingredients. Add more mayo until salad is desired consistency. Serve on whole wheat bread.
