fried chicken salad
In my old neighborhood I used to frequent a restaurant that served a fried chicken salad that I was addicted to. Since I live too far away anymore, I've played around with duplicating it at home. I think this is pretty close. At the restaurant they would drizzle the salad with both French dressing and Honey Mustard dressing for a wonderful taste sensation. Ranch works well too. I usually fry one chicken breast in bite-sized pieces which is plenty for 2 salads. But you could also use frozen chicken tenders if you prefer. I've even tried it with bbq chicken that is good too. Ingredients For fried chicken salad
- FOR THE CHICKEN:

1skinless boneless chicken breast, see note in intro

1egg, slightly beaten

1 Tbspwater (for the egg)

1/4 call purpose flour (or a little more to just coat the chicken)

vegetable oil, for frying

salt and pepper, to taste
- FOR THE SALAD:
-
4 clettuce, i use a purchased salad mix

1 mdtomato, cut into wedges
-
2hard-boiled eggs, quartered
-
1/2 ccooked corn
-
1/4 cbacon, cooked and crumbled
-
1/2avocado, sliced or cubed, optional
-
sliced green onions, for garnish
-
honey mustard dressing, for drizzling, optional
-
french dressing, for drizzling, optional
-
ranch salad dressing, for drizzling, optional
How To Make fried chicken salad

1For the chicken: Place the flour, salt and pepper in a shallow dish or bowl.

2Whisk the water and egg together in a separate shallow bowl and set aside.

3Dip each piece of chicken in this order: first into the flour, then into the egg, then back into the flour.

4Heat oil in a skillet over high heat. To see if your oil is hot enough for frying, dip just the end of one of the pieces of chicken into it. If it sizzles it's hot enough.

5Once your oil sizzles as soon as your meat touches it, gently add a few pieces at a time.

6Fry for 3-4 minutes then turn heat down to medium. Turn the chicken until it's browned on all sides.

7Move chicken to a paper towel to drain.

8Arrange the rest of the salad ingredients on a plate or in a bowl. Top with the chicken.

9Add dressing(s) and enjoy.
