1 mdred bell pepper, chopped (i like to use jarred roasted red bell peppers)

1 ccanned black beans, rinsed and drained

1/2 ccorn kernels, drained or thawed frozen corn)

2 crotisserie chicken, shredded or chopped
-
8 cromaine lettuce, chopped
-
1/4 ccrushed tortilla chips (optional)

1-2avocados, chopped
- DRESSING
-
1/4 cred wine vinegar
-
3 Tbspfresh lime juice
-
2 Tbspcanola oil
-
1 tspcumin
-
1/2 tspchili powder
-
1/2 tspgarlic, minced
-
1/4 canfresh cilantro, chopped
How To Make favorite southwest chicken salad

1Wash, spin and chop romaine lettuce and distribute among 4 plates.

2Gently toss the beans, corn and chicken together and add dressing to taste. Place chicken mixture on top of romaine. Add chopped avocado (cilantro if desired) on top and add additional dressing if needed.

3Top salad with crushed tortilla chips, if desired.
