This uses the "Curried Onion Relish" recipe that I also posted. This is a great for parties as an open faced hors 'd oeuvre. Will post a picture as soon as I can.

Ingredients For curried chicken salad crostini

1 lbcooked chicken breast, diced small

4 ozcelery, small dice

8 oz(fl oz) mayonnaise

2 ozcurried onion relish, use more if needed

salt and pepper , as needed

1head bibb or boston lettuce, leaves rinsed & dried

4 ozbutter, whipped

30 slicebaguette, bias cut, 1/4 inch thick

8 ozslivered almonds, toasted
How To Make curried chicken salad crostini

1In a medium bowl, combine the mayonnaise and curried relish; mix well, adjusting with more relish as needed. In a large bowl, combine the chicken and celery, add enough dressing to make moist but NOT runny.

2Cut the lettuce leaves to fit the baguette slices.

3TO ASSEMBLE: Lightly spread butter on the baguette slices. Top with a piece of lettuce and 2 T. chicken salad. Garnish with a few almond slivers. Serve immediately.

4* It's best not to assemble until ready to serve. You may also toast the baguette slices if you want that extra crunch factor.
