Ingredients For chinese chicken salad

3/4 cplain fat-free yogurt

1 Tbspsmooth peanut butter
-
1 Tbsprice wine vinegar
-
1 tspasian dark sesame oil
-
1 clovegarlic, minced
-
1/4 tspground coriander
-
2 ccubed, cooked chicken breast
-
1 1/2 ccooked cellophane noodles
-
6scallions, cut into 1-inch lengths

1red bell pepper, thinly sliced

1 can8 ounces sliced water chestnuts, drained

2 ctrimmed watercress or mixed salad greens

4 tspsesame seeds, toasted
How To Make chinese chicken salad

1In a medium bowl, combine the yogurt, peanut butter, vinegar, oil, garlic, and coriander. Add the chicken, noodles, scallions, bell pepper and water chestnuts; toss to coat.

2Cover and refrigerate for at least one hour.

3Serve over watercress or mixed salad greens and then sprinkle with sesame seeds.
