I made this for a wedding reception once. It is my favorite chicken salad receipe!

Ingredients For chicken waldorf salad

1 lbskinless, boneless chicken breasts

1 lgred skinned apple (such as macintosh or red delicious), cored and cut into chunks

2celery stalks, sliced

1/4 cgolden raisins

1/2 cmayonnaise
-
1/4 csour cream
-
2 tsplemon juice
-
1/2 tspsalt
-
1/4 cwalnuts, chopped

1 tspcinnamon
-
1/4 tspcurry powder
-
1/4 cgreen onions, chopped

romaine lettuce leaves
-
2 ozcrumbled blue cheese, optional
How To Make chicken waldorf salad

1In an iron skillet fry skinless, boneless chicken breasts in olive oil until golden brown and cooked through. Drain on papertowels, and cool.

2In a large bowl,cut cooled chicken into 1" chunks.Combine with apple, celery,raisins, walnuts, green onions and seasonings.

3In a small bowl, stir together mayonnaise, sour cream, lemon juice and salt. Pour over chicken mixture and toss well to coat.Chill.

4Serve on romaine lettuce leaves. Sprinkle with blue cheese if desired. Serve chilled with crusty bread or rolls.
