Ingredients For chicken waldorf: chicken salad w/ apples & walnuts

  • 1/2 c
    reduced fat mayonnaise
  • 3 Tbsp
    fresh lemon juice
  • 1/2 tsp
    coarse salt
  • 1/4 tsp
    ground pepper
  • 1/2
    cooked roast chicken, chopped or shredded
  • 2
    golden delicious apples, peeled, thinly sliced (i chop them for sandwiches)
  • 3
    thinly sliced celery stalks
  • 1/2 c
    coarsely chopped toasted walnuts
  • lettuce leaves, for serving

How To Make chicken waldorf: chicken salad w/ apples & walnuts

    In a large bowl, whisk together mayonnaise, lemon juice, salt, and pepper.

    Shred meat, and add to dressing. Add apples, celery, and walnuts.
