This is a kid friendly chicken salad and is full of crunchy celery and apples, grapes and raspberry vinaigrette for a great taste. Line cone with a leaf of lettuce and fill with salad of your choice.

Ingredients For chicken salad to go!

  • 1 c
    rotisserie chicken pieces more or less
  • 2 stalks
    celery, diced
  • 1 c
    red grapes. halved
  • 1 c
    diced red apple, cored, leave skin on
  • 1/2 c
    chopped walnuts
  • 1/4 tsp
    each of white pepper and salt or to taste
  • DRESSING:
  • 3 Tbsp
    raspberry vinaigrette
  • 1/2 c
    mayonnaise or to taste
  • TO ASSEMBLE:
  • 8
    romaine leaves, about 4x4 each
  • 8
    fresh raspberries
  • 8
    flat bottomed ice cream cones

How To Make chicken salad to go!

    Mix chicken, celery, grapes, apples, nuts, s & p, vinaigrette and mayonnaise. Chill.

    To serve: Line each ice cream cone with a romaine leaf. Fill with the chicken salad, mounding it up. Top each with a fresh raspberry, or other fruit.
