Chicken salad makes a great lunch or a refreshing dinner. Roll it up with lettuce leaves and make a totally gluten free and healthy meal.

Ingredients For chicken salad gluten free

  • 4 c
    chicken cooked and diced
  • 2 c
    chopped celery
  • 2 c
    sliced seedless grapes
  • 4 Tbsp
    chopped fresh parsley
  • 1 c
    greek yogurt or 1 cup mashed avocado
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How To Make chicken salad gluten free

    Grill chicken until done dice and set aside.

    Mix yogurt or avocado, salt, pepper in a small bowl.

    Combine yogurt or avocado with diced chicken mixture. Chill 1 hour.

    Serve chicken salad on a bed of lettuce or on crescent rolls...... If you have this on a crescent it will have some gluten.
