I came up with this recipe trying to make a healthy snack with lots of flavor.
Blue Ribbon Recipe
This is not a traditional chicken salad and we loved it. Blending all the ingredients together brings out their flavor. We love the nuttiness of the cashews and the salty green olives. Bell pepper and green onions add a pop of freshness. Mayonnaise is the glue that holds it all together. We served ours with our favorite nutty cracker and it was a delicious light lunch. If you don't have leftover grilled chicken, pre-cooked grilled chicken breasts work too. Going that route makes this simple chicken salad even easier.

How To Make chicken salad

1To a food processor, add the grilled chicken, olives, and cashews.

2Then add the bell pepper and green onions. Pulse until well diced.

3Mix in mayo, salt, and pepper. You can use more or less depending on how moist or dry you want it.
