I have been making this salad for my family for years. It's very versatile...add or take away what you want...I like to load my salads with lots of veggies...around here many restaurants add fries to these salads...I prefer to fore go them...I like a lot of onion, garlic and plenty of spice on the chicken pieces as they saute, and lots of melted sharp cheddar, mozzarella cheese melted over the chicken... I had left over mixed salad from the other nights dinner, so this is how I used it. Enjoy! My photo

Ingredients For cheesy chicken salad - cassies way

  • 3 md
    boneless, skinless chicken breasts - sliced into bite sized pieces, about an inch thick
  • olive oil for sauteing the chicken
  • 1 lg
    onion, sliced
  • 3 - 4 clove
    garlic, minced
  • 8 oz
    fresh mushrooms, sliced ( optional ) i usually saute them with the chicken...was fresh out
  • 1 md
    red bell pepper, sliced ( optional ) but is delicious - i had none, but always add to chicken while sauteeing
  • 1 tsp
    cajun seasoning
  • 1/2 - 1 tsp
    garlic powder
  • 1/2 - 1 tsp
    onion powder
  • red pepper or red pepper flakes ( a couple sprinkles) - optional
  • few shakes
    paprika
  • salt and pepper to taste
  • 1/2 - 1 c
    shredded, sharp cheddar cheese
  • 1/2 - 1 c
    shredded, mozzarella cheese
  • enough salad mix of your choice to modestly cover each plate
  • french fries if using, and your choice of salad dressing ( we like spicy ranch on ours )

How To Make cheesy chicken salad - cassies way

    Slice your chicken, season, mix with hands to make sure all of the chicken is well seasoned. In a large skillet; heat the oil over medium heat. When good and hot; add your chicken and saute, about 7 minutes per side. About half way through...add the onions, garlic, peppers and mushrooms if using.

    When chicken is golden and cooked through, and the veggies are tender; sprinke evenly with cheese. Cover, and let the cheese melt all over the chicken and vegetables.

    Once the cheese is good and melted. Cut into 4 even portions. Immediately top your plates of lettuce with a portion of the cheesy chicken. Salt and pepper...add your fries if using, salad dressing...now, enjoy a delicious salad...
