This is one of my favorite chicken salads. It is versatile because you can use the BBQ styled dressing it calls for or a dressing of your choice. I sometimes like to use either Ranch or Greek Feta dressing. (This recipe came from Quick Cooking recipe books)

I am always ready to try a new salad and when BLT is in the title... well, hold me back! The BBQ sauce adds an unusual and pleasantly surprising twist that caps the salad off perfectly - ideal for a summer afternoon.

Ingredients For blt chicken salad

  • 8 c
    torn salad greens
  • 2
    large tomatoes, chopped
  • 1 1/2 lb
    chicken, cooked and cubed
  • 10
    bacon strips, cooked and crumbled
  • 2
    hard boiled eggs, sliced
  • BBQ Dressing
  • 1/2 c
    mayonnaise
  • 3-4 Tbsp
    BBQ sauce, your favorite!
  • 2 Tbsp
    finely chopped onion
  • 1 Tbsp
    lemon juice
  • 1/4 tsp
    pepper

How To Make blt chicken salad

    In a small bowl, combine the 5 ingredients listed under BBQ Dressing, mix well. Cover and refrigerate until serving.

    Place salad greens on a large platter. Sprinkle with tomatoes, chicken and bacon; garnish with eggs.

    Drizzle with Dressing or serve the dressing on the side.

    My tips...as I said in my above comment, I sometimes just serve it with Ranch or a Greek Feta Dressing. I like to use cherry tomatoes and just cut them in half. Use as many eggs as you like...and I also like to add cubed mozzarella cheese. You can also use cooked and cubed turkey instead of chicken!
