My daughter actually came up with this salad recently for her husband who eats very healthy but wanted something a little different. Now, we all eat this salad!! YUm-yum!

Ingredients For bbq chicken salad w/ bbq-ranch dressing

  • 8 oz
    grilled chicken breast, sliced into thin slices
  • 16 oz
    mixed salad greens
  • 1 c
    pre-mixed broccoli slaw
  • 1 can
    mexicorn, drained
  • 1
    15 oz can bush's black beans, drained
  • 1/2 c
    shredded mexican-style cheese
  • 1 c
    tortilla strips for topping or garnish
  • 1/2 c
    light ranch dressing
  • 1/2 c
    favorite bbq sauce

How To Make bbq chicken salad w/ bbq-ranch dressing

    In a lg bowl, mix salad greens, broccoli slaw, corn and beans.

    Top salad w/ chicken slices and sprinkle w/ cheese. In small bowl, whisk together dressing and BBQ sauce. Drizzle over salad.

    Right before serving, top salad w/ tortilla strips.
