This may sound crazy, but it is good! Just serve it on a lettuce leaf - can also use left-over turkey.

Ingredients For banana chicken salad

  • 3 c
    cut-up cooked chicken (or turkey)
  • 1-15oz can
    Red Kidney Beans, rinsed & drained
  • 1 c
    Pineapple Chunks
  • 3
    bananas, small, sliced
  • Lettuce leaves
  • 1/4 c
    Fresh Lemon Juice
  • 1/4 c
    Olive Oil
  • 2 Tbsp
    Chopped Canned Green Chilies
  • 1 Tbsp
    Chopped Pimento
  • 2 Tbsp
    Chopped Parsley
  • 3/4 tsp
    Salt
  • 1/4 tsp
    Dry Mustard

How To Make banana chicken salad

  • 1
    In large bowl combine chicken, Kidney beans, pineapple and sliced bananas. Toss with Green Chili Dressing. Serve on Lettuce leaves.

    GREEN CHILI DRESSING: Mix lemon juice and next 6 ingredients in small bowl. Let stand 1 hour or longer for flavors to blend.
