This is a great meal served together. However,it can be served as a big "fill me up" snack, when a big football game has your attention. The Bacon Wrapped Dates can be keep warm and the salad can be keep in a warm and cook area to put together at half time. Both are soo delicious and filling. Also, it is very nutritious. It's a food you can talk about as long as you talk about the game...ENJOY

8 ozapple flavored bacon

1 lblarge pitted dates
- SOUTHWESTERN BBQ CHICKEN SALAD

2 cshredded roasted or grilled chicken breast

1 cblack beans from can, drained and rinsed

1/2 cbarbecue sauce, your preference

1/2 cfresh, chopped cilantro
-
1/4 cfinely chopped green onion

8 cdark green salad greens, from a bag or torn lettuce head

2 mdtomatoes, chopped

1 cfrozen corn, very lightly microwaved and chilled in refrigerator

1/3 cranch dressing
-
tortilla chips
How To Make bacon wrapped dates & southwestern bbq chicken salad

1FOR THE BACON WRAPPED PITTED DATES: Preheat oven to 350 degrees. Cut bacon slices in half. Pit dates if not already pitted. Wrap each pitted date with 1/2 slice of bacon, use tooth pick to secure. Set on baking pan with sides to catch the bacon grease.Bake for 15 - 20 minutes, or until bacon is crisp. Remove from oven and transfer to a serving platter.

2SOUTHWESTERN BBQ CHICKEN SALAD: May us a rotisserie chicken purchased at the super market, just cut into small strips. Combine chicken, beans, BBQ sauce, cilantro and green onion in a medium sized bowl, toss well; set aside. In a large salad bowel, add salad greens, tomatoes and corn, toss to mix. From the 2 bowls, put salad mixture in serving bowls first then top from chicken mixture bowl. Drizzle with Ranch Dressing. Garnish each individual bowl with tortilla chips. If necessary may double or triple recipes .
